It bears mentioning that nothing grows “through” your paver patio. At least nothing as far as modern science is concerned. What will happen is that seeds carried by the wind will land in your patio and may grow in-between your paver joints. With this in mind, it is impossible to make your patio 100% weed free.
The good news is that there are ways to prevent weeds from growing. For example, during your patio’s building stage, your contractor could (and should) use an inorganic compound, like stabilizer sand, in the joints between the pavers. This works as a preventative measure, as weeds are highly unlikely to prosper in the inorganic sand between your pavers, but it’s not fool proof. Blowing off your patio with a leaf blower daily also helps to uninvited seeds squatting on your patio.
If weeds have already started growing, then consider using weed killers to take care of them, or simply get dirty and pull the weeds out by their roots. Either of these should help you restore your patio.
Again, while it is impossible to make your patio 100% weed free 24/7, there are some basic precautionary/preventative measures to aid you in preventing any weeds from growing, and to remedy them should they grow.
